As we search for the freshest coffee harvests across Latin America, we conclude our Colombian editions with a very special coffee from a remarkable grower. Meet Edilberto Tovar from Huila, Colombia. Despite a severe accident at 18 that limited his mobility for life, he has never stopped producing incredible coffee. This month, we feature the highly sought-after Pink Bourbon variety, freshly harvested in December 2023. It is a honey-processed coffee, striking a balance between the natural and washed process flavors we've enjoyed over the past two months. Expect notes of red fruits, chocolate, caramel, and lemongrass, accompanied by juicy citric acidity and a full body that lingers.
